Am not a shastri nor any learned scholar on the topic.
Am just a regular guy who grew up reading loads of
'Amar Chitra Katha' (-8

If I remember correctly, as the story goes, Lord Shiv 
didn't even know of
the-boy-who-later-on-went-on-to-be-
named-Ganesh's existence since Parvati had 
sculpted/created the boy from her 'ugtan' in Shiv's 
absence to guard the door while she took her bath.

While she was taking her bath, Lord Shiv arrived and 
told the boy to let him through ... The boy not
knowing who he was told Shiv that he was not allowed
to let anyone through.

Shiv in a rage attacked the boy and a fight ensued
resulting in Shiv chopping off the boy's head.

When Parvati arrived on the scene and saw her son
dead,
she was inconsolable and in a rage started cursing 
Shiv and his army of GaNs and Shiv, fearing his wife's
anger ordered his GaNs to find a replacement head
for the boy ... the rest as they say is history ..
or in this case his (Ganesh's) story.
