South Indian or most vegetarian diets in India tend to make up a lack of meat protein with daal and sprouted beans of different varieties. The most important factor in any diet I think is what the genetic demands are. The biggest killer in my opinion - not scientific fact - is when you modify your food habits. My father died at the age of 81 of emphysema and cancer. Never had any problems with Cholesterol or hypertension. His food had to be cooked in coconut oil. All vegetable dishes and fish had to have either coconut or coconut milk. Ghee was standard issue for him as well. I am sure if a north Indian tried his diet it would be lethal. But the genes over time get used to the metabolising of these foods. Well that is my opinion.
