Choose from hotels in South Mumbai - Colaba or Nariman Point area, rather than 
ones close to the airport.  It is far less crowded (except at the railway 
stations) compared to the airport or suburbs, and is also close to most places 
of interest. Some good ones are Ambassador, Fariyas and Diplomat.

While in Mumbai, visit the Victoria Terminus (now called CST) railway station - 
for nice architecture. In almost all Bollywood flicks, the facade of the VT is 
a permanent fixture.  You'll also get a glimpse of the daily grind - the Mumbai 
train commute. 

Recently, the Leopold Cafe has become a hit with foreign tourists due to the 
Shantaram book and the buzz generated by the upcoming movie by Mira Nair, 
starring Johnny Depp and Amitabh Bachchan. Taxi drivers offer the "Shantaram 
tour" as well and Madonna did the tour sometime back.

I have also heard about some enterprising folks offerring "experiential 
tourism" in Dharavi - anyone have any clues?
